Ingredients

1 Tomato, diced
2 lbs of chopped chicken
2 Large onions, grated
4 cloves of garlic
1 1/2 inch of garlic, shredded
2 tsp each of coriander powder, turmeric and cardomom
1 tsp each of cumin seeds, paprika, crushed red pepper
6-8 cloves of pepper corns
salt to taste
2-3 bay leaves
1/2 stick of your choice of butter ( I use dairy free)
6 oz of tomato sauce
1/4- 1/2 cup of water or more as needed
Step 1
Cooking
Melt butter in a large pot. Add in the grated onion and brown lightly. Next, add in the garlic and ginger. Cook for 5 mins.
Add in the spices and tomato paste. Cook on low for 15 mins stirring constantly.
Step 2
Cooking
After 15 mins, add in your chicken. Cook the chicken for about 15-20 mins stirring, so it doesn't burn. Add in your water. Cover the pot and cook until the chicken is tender about 5-10 more mins.
Five minutes before the dish is done cooking, add your chopped tomato.

Instead of chicken, you can use or add chickpeas, beer, peas, meatballs, and potatoes. This recipe serves about four servings, and I usually double it for leftovers. It also freezes well.
